House of Commons Dorset Air Dried Beef
The House of Commons has partnered with Caprelous Fine Foods of Dorset to offer a new range of British-sourced produce. Their Dorset Air-Dried Beef is made using the silverside of grass-fed PGI West Country raised beef, which is cured with herbs, spices and port before being slowly air-dried in their maturing room for several weeks.
Like Italian Bresaola, the texture is firm but supple and the colour is a deep rich red with a flavour to match. The classic way to serve would be with salad of lettuce and rocket with shavings of parmesan and a drizzle of extra virgin olive oil.
Ingredients: Beef, salt, muscovado sugar, black pepper, rosemary, thyme, juniper berries, port (SULPHITE) 160g beef used per 100g.
